Get your limes ready! Have some sort of tequila on hand. You’re also going to need a bit of lime curd. Use my How to make Lemon curd in 6 east steps post to make your lime curd. Just replace lemon juice with lime juice and you’re there!
So you have your Lime Curd, a few limes, and now to make the cake. Oops! forgot to take care of the tequila! Take a cup of tequila put it in a small saute pan. Very carefully light the tequila on fire using a fire starter stick. You’re going to burn off the alcohol, yes, burn it off. You want the intense flavor, and if you want to add a bit of alcohol I’ll let you know how and when to do that too! Once the flame dies out, set aside the tequila for use in the cake. Be careful when doing this because the flame is almost invisible, make sure it is out before walking away from it.
The recipe we use is a simple white cake with a few alterations. I use a scratch recipe, but if you’re in a hurry you can use a mix cake and make the same kinds of alterations and probably have similar results. So on with the recipe:
I use Betty Crocker’s Silver white cake mix.
2 1/4 cups sifted cake flour
1 1/2 cups sugar
1 tsp salt
3 1/2 tsp baking powder
1/2 cup unsalted butter (softened)
1/2 cup milk
1/2 cup tequila
3 tsp lime oil (if you can find lime oil, use lime juice)
4 large egg whites
1 Tbs lime zest
Mix together dry ingredients. Mix in butter. Pour in milk, tequila, and lime oil or juice. Beat for 2 minutes on medium speed. Add egg whites to mix and beat for 2 minutes. Pour into two eight inch round pans. Bake at 350 degrees for 25 – 30 minutes or until done. Allow to cool. Brush cupcake with simple syrup. Simple syrup is easy to make, 1 cup of sugar and 1 cup of water mixed together, bring to boil on stove top. Allow to cool, mix in balance of tequila.
Once cupcakes are cooled, fill a pastry bag, and using a round tip (#11) with your lime curd. Poke tip into cupcake and fill cupcake with lime curd being careful not to overfill it. Frost with your favorite buttercream, but first add a bit of lime zest and to the buttercream. If you want to add a color to the frosting now is the time to add it in. Top cupcakes with swirl of frosting and garnish with a lime wedge.
